Making cakes at home


Eggless Vanilla Cake Using Microwave




Ingredients

2 cups Flour, 1 cup Unsalted Butter, 1&1/2 cup Powdered Sugar, 1&1/4 cup Milk Powder, 1&1/4 cup Milk, 1 tsp Baking Powder, 1/2 tsp Soda bi carb, 1 tsp Lemon Juice, 1 tsp Vanilla Essence

  • Preheat oven at 180* c. and dust a 8"/9" cake pan.
  • Now mix the butter and sugar very well, till it is white and frothy.
  • In a seperate bowl mix well flour, milk powder,baking powder and soda .
  • Add the flour mixture to the butter and add milk (check your batter doesn't get very loose..)
  • Mix well add vanilla and lastly add lemon juice.
  • If using fruit pcs or nuts you can add it now.
  • Pour in the prepared tin and bake for 40 min at 180*................ Enjoy


Making of Chocolate Cake Using Microwave 




Ingredients
Flour 3/4 cup, Sugar 1/2 cup, Oil 1/4 cup, Eggs 2, Baking Powder 1 1/2 Tbsp, Vanilla Essense 1 tsp
Cocoa powder 1 1/2 Tbsp, Warm water 1/4 cup, A pinch of salt

  • Sift the Dry Ingredients (maida and baking powder).
  • Dissolve the cocoa in the warm water  
  • Beat the eggs and sugar until well blended and creamed.
  • Add the oil, vanilla essense and warm water (mixed with cocoa powder) and mix well. Finally add the flour and fold into the egg mixture.
  • Grease a cake tin and pour this batter into it.
  • Microwave this cake for 5 minutes on high. 
  • Cool it and decorate with cofee icing or your choice

Coffee icing

Cream together 1/2 cup butter and 1 cup of icing sugar. Once well blended add 2 tsp of strong coffee decoction and beat again. You can either cut the cake into 2 and spread the mixture and sandwich the two pieces again or spread all over the cake. 


Vanilla / Pineapple Sponge Cake using Egg

Ingredients

 

170gms flour, 1 1/2 tsp baking powder

170 gms butter or margarine, 170 gms powdered sugar, 3 eggs, 2/3 cup milk (approx.), 1tsp vanilla / pineapple essence


  • Sieve the flour. Keep aside. 

  • Cream the butter and sugar very well.   

  • When the mixture is light and creamy, add the eggs, one at a time, beating each time thoroughly. If the mixture curdles while adding the eggs, add a little flour before adding the next egg. 

  • Finally, fold in the flour and add milk until the batter has a dropping consistency. 

  • Add the vanilla / pineapple essence and mix well. Keep aside. (Do not mix up both essence  : D)

  • Grease and dust two 175 mm. (7") diameter cake tins. 

  • Pour half the mixture into each of the two prepared tins.   

  • Bake in a pre-heated oven at 200°c (400°f) for 20 minutes. 

  • Keep aside to cool and use as required.
